Rice, spelt and banana pikelets….sort of

For Random Recipes and Breakfast Club this month the themes are very health based. Great, thought I, I will finally have to try something from the Wholefood: Heal, Nourish, Delight book  which I was once recommended.  Well dear readers, brace yourselves because this is not going to be pretty.


1.I had to re-random several times to find any recipe which I stood even a remote chance of having the ingredients for – most of them are about a page long before you even get to the instructions

2.The recipe didn’t have all ingredients in the list – when I got to “add the yoghurt” and realised there was no yoghurt listed I disocvered that the recipe was actually half finished and had been placed incorrectly on the item before (pancakes). On the upside I could therefore blame the offering below on bad instructions.

3. I couldn’t find either brown rice flour or buckwheat, so I used the suggested spelt flour instead and used normal rice flour.

4. Annoyingly these actually tasted really nice…in a big lump of cooked dough that was too traumatic to photograph. You can see the only salvageable offering below. I wouldn’t make these for a brunch-party but I would actually make them again though definitely not calling them pikelets (they are more like drop scones)

Not a super-model

Given that the recipe was incorrect in the book, I don’t feel too bad reproducing this.

Brown rice, buckwheat and banana pikelets
from Wholefood by Jude Blereau

45g brown rice flour – I used normal rice flour
30g buckwheat flour – I used spelt flour
125ml soy milk
1/2 tsp baking powder
1 mashed banana
1tbsp natural yoghurt – I used 0% greek yohgurt

Put the flour, yoghurt and milk in a bowl and whisk together until combined
Cover and leave overnight in the fridge.
when you’re ready to make the “pikelets” add the baking poweder and mashed banana and mix well.
Heat a knob of butter in a frying pan and pour the mixture into the pan – recipe says 2 tbsps but I think 1 is more realistic. I also tried using a crumpet ring – bad idea.
Cook for 1-2 mins then turn and cook for 1 min on the other side. It should go bubbly.
Eat and be surprised that they taste really rather good!

    My Random Recipes entry was a disaster too – lovely flavour but dreadful texture! I was hoping to enter it into the breakfast club but it was too dreadful for that, so I didn’t. Glad to see I’m not the only one who has entered a ‘flop’ due to poor recipe writing! 🙂

    At least you had some yoghurt! Well done on making something tasty from what could have been a disaster, you should send them a link to this post to highlight the error 😉

    badly written cookbooks are the most stupidly annoying things in the world… and such a disappointment when you’re looking forward to cooking from them… but I truly appreciate the effort and it’s quite nice that they at least tasted ok… i’m crazy for spelt at the mo so I may try and find a spelt pancake recipe and re-create these!… thanks for the entry!
