Chocolate Sugar Cookies and The Great Food Blogger Cookie Swap
Having witnessed the Great Food Blogger Cookie Swap last year I was keen to take part this time around. The idea is that you make one big batch of cookies and send a dozen each to three different bloggers. You pay a small fee to enter, which is donated to COOKIES FOR KIDS’ CANCER - a US based non-profit organization committed to funding new therapies used in the fight against pediatric cancer. So, 3 dozen surprise cookies and contributing to a good cause – win.
I got overexcited, didn’t read the instructions (who’d have thought?!) and made three different types of cookie – Yottam Ottoleghi’s spice cookies, sugar cookie snowflakes and these, which I’m nominating as my official recipe for the event – chocolate christmas pudding cookies.
Chocolate Christmas Pudding Cookies
For the cookies:
150g golden caster sugar
50g soft brown sugar
1 medium free range egg
320g plain flour
1/2 tsp vanilla bean paste (I use Nielsen Massey as I like it best, but I promise you they’re not paying me to say that)
100g bar of nice white chocolate or candy melts but they won’t taste as good
Green ready roll icing for the holly
Red ready roll icing for the berries OR you could use glace cherries / cranberries /red edible sugar balls
A small holly leaf cutter like this or this
A piping bag or baking-only paintbrush
Preheat oven to 180C
Cream butter and sugar until light an fluffy
Add the egg and vanilla
Mix in flour and cocoa to firm dough (you may need to knead very slightly, but try not to)
Roll out to 8mm thick
Bake for 10-12 mins
(The cookie dough keeps in fridge for a week)
While the cookies are baking, cut out the holly leaves and roll the berries.
When the cookies are cooled, melt the white chocolate and either pipe or paint it on the white chocolate to look like brandy sauce.
Before it sets, stick two leaves and some berries on top. Tadaa!
